Become an Instant Pot Pro and a master of batch cooking!

If you have an Instant Pot, bring it with you (with your name on it); you're going to be a pro at using it!

I'll teach you how to:

  • Use all of the features

  • Convert non-IP recipes

  • Cook dry beans (no soaking required) and grains

  • Saute and build flavors (this makes everything taste better)

  • Steam vegetables and potatoes

  • Make broth, soup, chili...

"Great class! Thank you, Diane"

"...That lime dressing is delish! Thank you for a fun and informative class."

“Hi Diane, thank you very much for a great cooking class. This is not the first one I attended and just like the other ones I am always amazed to walk away with more then I hoped for, you share so much more then just recipes. Watching you and learning from your tips and tricks is so helpful and fun. I started my health journey many years ago when my cholesterol was super high and I attended one of your 6-weeks guided classes. I started to learn to cook healthier and be able to manage my numbers with food and healthy living choices. Since then I have always be out for learning to not only eat healthy but also to make it taste good and convenient for a busy lifestyle. Not only do I have now tools to make a very delicious healthy fulfilling salad I can make ahead and take with me but also tips on how to prepare some of it ahead of time. I am looking forward to attend more of your classes in the future. Thanks again ”

“I really enjoyed the class because with my busy career and family, the tips and instructions for salads in a jar will help me make healthy food choices. You simplified steps needed to make healthy eating possible. It would have taken me many hours to learn what you taught, or I never would have learned at all. This will improve the life of me and my family.”

About the class...

The best way to ensure you eat healthy is to have healthy, delicious food available at all times.

I’ve eaten and loved salads most of my life, but I’ve never enjoyed them as much as these Jar Salads. They are so colorful and pretty, that when I open the frig, they draw my eye and my hand to them! I'm not kidding! If you're like me, you'll eat more salads...and that's a good thing!

My daughter recently me to babysit my granddaughter. My first thought was, I need to bring food! Then, BINGO, I remembered I had some Jar Salads in the frig! It was like I struck gold!  Woo Hoo! I put one of the jars in my insulated bag to take with me and I was in salad heaven for lunch!

It's really fun to put these Jar Salads together. I always make enough for three jars, so I have a ready-made salad for three days. If you want to eat more than one a day, make more! Not only are they uber-convenient, but in my opinion, they taste better than regular salads! With this method, it doesn’t take much more time to make three salads v. one. I’m totally hooked on prepping my salads this way and I can't wait to share it with you!

Bring three of your own 32-oz jars with lids to make your own Jar Salads and start your meal prep that day! If you don't have jars and lids yet, let me know and I will have some for you to purchase (Jars $2, plastic reusable lid (optional), $1.75 ea)

You'll learn:

  • Various combinations of salads and ingredients that go best together

  • Homemade Salad Dressings...they are the key to making salads taste incredible. We'll take a deep dive into making easy, nutritious and tasty salad dressings that you will absolutely love, and the secret method that makes the best dressings.

  • The ingredients that provide beautiful color, textures, flavors and, most importantly, nutrients that our body will thrive on.

  • My new favorite stovetop “Tofu Chicken,” with spices that can complement any salad. I'm not kidding when I say they taste like tasty chicken tenders! Great in salads, tacos, etc, or to snack on all by themselves!

  • How to sprout broccoli sprouts and lentils. Sprouted lentils add a sweet, crunchy texture to your salad, and they are higher in nutrients and more easily digestible than unsprouted varieties. And, did you know that broccoli sprouts have 50-100 times more healing properties than than broccoli?

  • How to cook dry beans in the Instant Pot for tastier beans than you can buy in a can. They require no soaking!

To add to the daily meal prep, we'll make an easy and very nutritious breakfast and snack that you can make once and enjoy for days!

More salad motivation...

Why should we eat salads? So many reasons!

1) Plant diversity is key when it comes to a healthy gut. Salads are often filled with polyphenols, which can promote the growth of good bacteria in the gut. When polyphenols from food reach the gut microbes, they modify the microflora and have prebiotic and antimicrobial properties. A healthy gut can impact your entire body from your gastrointestinal tract to your brain, heart and immune system.

2) You'll eat more fiber! Fiber has been shown to be beneficial for diabetes and heart disease and contribute to bodily functions like bowel regularity and satiety levels.

3) You'll eat more veggies and fruits! Most people don't get the recommended daily servings, so eating a salad every day will help get you there as well as plant diversity and eating the rainbow!

Wildly Plant Fit on a Budget!

Date:

Time:

You can thrive on a whole food, plant based diet on a budget!

I live on a tight budget, so I typically spend $150 to $250 per month on food for myself. This is eating well, yet being mindful about where I shop, what I buy, and what I eat. Minimal to no processed food, mostly organic, mostly home cooked meals (I typically eat out twice/month).

This class will cover how to save loads of money with careful planning, shopping wisely, food prep, cooking as well as storing to prevent any food from spoiling and ensuring you use everything you buy and cook.

We will prepare some basic food items that should be staples that you will want to have on hand at all times.

Space is limited to 8. You must pre-pay to hold your spot.

D'Licious Vegan Breakfasts

Date:

Time:

Breakfast may be the most important meal of the day because what you put into your body in the morning sets the tone for the entire day. For example, eat a nutrient rich meal first and your body will crave the same. Conversely, eat nutrient deficient food and your body will crave the same.  Sugar and processed carbohydrate cravings depend in large part on what we put into our body, especially in the morning. This class is packed with the foods that will set the tone for a healthy, high energy day!

Class options:

  • Overnight Soaked or Stove Top Oats  - easy to prepare, easy to digest and the ingredients (there are many!) are so important for flavor, texture, fiber, nutrition and satiety. No hunger pangs after this meal! My favorite is made with raw cacao powder - it tastes divine!

  • Tofu Scramble

  • Green Smoothies - Of course, this goes without saying how nutritious it is. I'll explain why I put the ingredients in and what options are best.

  • Breakfast Burritos

  • Smoothie Bowl

  • and more...

There are so many meal options that I will actually leave it up to the class to decide! What are you craving or want to learn how to make? Allow one week lead time for me to shop and prepare with the necessary ingredients.

Ideal Life Box Class

Date:

Time:

Each year, there inevitably comes the desire to start fresh and create change. We begin by writing down our goals because we know we are 90% more likely to achieve what we desire if we write it down, create a plan that breaks each goal down into incremental doable steps, then we assign a due date for each of those steps and voila – we have accomplished everything we set out to achieve by the end of the year – right?

In many cases somewhere along the way, we lose our motivation or are sidetracked by life, time passes, and those lofty goals that we wrote with such excitement go by the wayside.

Here is something new you can try that I hope you will love. I've used it and find it much more effective than a goal poster, because it's more than visual, it's tangible, and the "feelings" of achieving it hold more meaning than just the end result.

What we'll do in class (I will provide all materials, but you are welcome to bring your own):

  • Write your ideal life "story."  I will send you a worksheet to help prepare you. You can finish this part at home prior to the class if you like.

  • Make your Origami box/lid. This is fun! You have the option of bringing your own box if you like.

  • Write feeling words that resonate with you from your story on separate small pieces of paper.  These go in the box.

  • Embellish the box if you like.

  • Instructions to how to use this daily to manifest your goals/ideal life.

A plant based snack will be provided, but feel free to bring your own food/drink or something to share.

Class Fee: $

Class Minimum: 5

Class Limit: 20

Class Duration: 90 minutes

Location - Diane's House, Folsom
